Cheesey Chicken Quesadillas
Ingredients:
- 1 cup shreaded daiya deliciously dairy free cheese
- 3 chicken breast
- 1/2 red onion
- 1 tbsp taco seasoning
- 1 tbsp parsley
- 1/2 tbsp garlic powder
- 1 tbsp olive oil
- 4 soft tortillas
- Tofutti ‘better than’ Sour cream
- Salsa
Instructions:
- Cut chicken breast into strips, and again into 1 inch pieces
- Dice 1/2 of a red onion, approx 2/3 cup
- In a small dish combine taco seasoning, garlic powder and parsley
- Heat skillet with oil over medium high heat
- Add sliced chicken and onions, then sprinking the combined seasonings over the chicken breast, stirring well to cover it all
- Cook chicken until an internal temp of 75-80°C is reached
- Prepare sandwhich press to begin heating
- Scoop the cooked seasoned chicken and onion onto half of a tortilla, foldinging over the other half, and place sandwich press for approx 5 minutes
- Repeat for remaining leftovers
- Serve with salsa and toffuti sour cream
